Oven Roasted Rack of Lamb

Alright, I tried this recipe a few weeks before Christmas and I thought it was so good. Definitely good enough for a New Year’s recipe anyways. I was perusing through the meat section at the grocery store when I spotted them — the beautiful racks of lamb lolliChops. I couldn’t resist because I love all things lamb. So we ended up with 9 lolliChops when we got home. I didn’t know how I was going to do them at first, but I had a couple marinades in mind. And yes, I did end up doing two different marinades, this one with the balsamic, and the herb and garlic one I also whipped up here.

Because I couldn’t decide on which marinade to use, I ended splitting up the rack in half so I can do both of them just to make it fun.

This marinade is super easy and you most likely already have the ingredients in the cabinet.

I cooked this meal in our Force 10 oven in our boat galley. Please let me know if you have any questions on your boat oven. Don’t worry, it’s the same recipe if you’re cooking in a house oven as well.


Ingredients

  • 1/2 cup Balsamic Vinegar

  • 1/2 cup low sodium Soy Sauce

  • Lime Zest to taste

  • Rack of Lamb

Instructions

With this particular marinade, because it’s so simple, I’m just going to pour it directly in my shallow pyrex pan that I'll use to marinade the rack of lamb in (and I’ll also use it to cook in too), to avoid making more dishes. I’m a super fan of less dishes, especially on a boat.

Go ahead and mix the balsamic vinegar and the soy sauce together. I suggest zesting a lime over parchment paper (or a plate) that way you can add the zest to taste. The lime zest adds a good bit of tang to the marinade. So make sure to start with a very small amount, stir into sauce, and taste to see if you like it. If it’s not tangy enough, add a little more zest until it fits your style.

That’s it. You’re done with the marinade.

Now the time has come to give attention to this beautiful rack of lamb sitting on my counter. Like I said before, I have an affinity for all things lamb.

After I unwrap the lamb, I place the whole rack (in my case, 1/2 rack) meat side down in the marinade. I like to get a big spoon and spoon the marinade over the top making sure to soak all parts of the meat.

I cover with a dish towel and let it marinate for 3-4 hours.

Bake In Oven

Set the oven to 350˚

Get ready to sear the meat. Don’t drain your marinade quite yet, save that for one last dip before the oven.

Get a large pan coated in extra virgin olive oil ready on med-high heat. Get a pair of tongs to grab the bones of the rack. When the pan is hot enough, sear each side of the lamb for 10-15 seconds.

Place seared meat back in the marinade for the meat’s last dip before draining the all of the excess liquid. Make sure the fatty side of the rack is facing upwards so the meat soaks up all of the flavor from the fatty side.

Once the oven is to temperature, go ahead and place the pan on the top rack in the oven.

Don’t forget to set the timer! Set timer for 15-20 minutes depending on how you like your meat temperature.

I like mine rare to medium-rare and Bobby likes his medium, I finally convinced him to stop eating his meat well done. I don’t judge those who eat their meat well done, but I think it makes meat too tough to enjoy, but I understand not wanting bloody meat. So he settled on medium, medium-well. We get a kick out of it anyways.

While the lamb is cooking, now is a good time to start on your sides. This time we had Burnt Butter Carrots and a baked sweet potato.

Once the timer goes off, it’s time to pull the rack of lamb out of the oven. I like to let it set for 5-10 minutes before slicing between the bones to get individual lolliiChops for easier serving.
